Sweet Potato Poblano Hash

Sweet Potato Hash This is a sheet pan dinner.  Keeps the stovetop clean and shiny.  Everything is roasted separately at 400 degrees and then tossed together at the end.  The key is to cut all the items to similar sizes or based on their cooking times to get them nicely brown and roasty.

2 sweet potatoes, 1/2 inch dice

2 onions, 1 inch dice

6-8 slices thick cut bacon, diced small

3-4 poblano peppers, 1/2 inch dice

6 links, Aidell’s chicken apple sausage, quartered, 1/2 inch dice

 

Put bacon and onions on one sheet pan, roast for 20-30 min.  Sweet potatoes roast for 20-30 min.  Scoot sweet potatoes to one side and dump browned bacon and onions into one corner of the sweet potato pan.  Use the bacon pan to roast the poblanos and chicken sausage for 15-20 minutes.

To serve, either leave everything separate (my kids will not eat peppers) or combine in a bowl and top with 2 sunny side up eggs  or just Louisiana Hot Sauce for me!
